Fava beans have a short market appearance---and preparing them is a labor of love. But so worth the efforts. One way to cook favas are to peel the pods carefully taking out the whole bean. Place the beans into boiling water and cook for only a few minutes until you see the beautiful green inner bean starts to pop out. Then place those into iced water, drain, and pop the inner bean out of it's delicate shell. I like combining favas with pasta, or a great salad of favas, garbonzo beans with a lemon and olive oil and mint dressing. Add a little salt and pepper, and you have a delicacy you'll love.
